Vacuum Storage Uses and Advantages
Many of you are familiar with packaged food but not with the process used to preserve it. Vacuum storage or packing is the method through which food is stored before it is distributed for sale. Suitable food types are stored in a vacuum environment, mainly in an airtight can. This helps to prevent development of microorganisms that normally damage the food. The vacuum conditions get rid of atmospheric oxygen to prevent the food spoilage by reducing the growth of fungi. It also prevents evaporation of some of the volatile components. In most cases, vacuum packing is applied to keep food edible for long periods of time.
Cereal foods including grains are stored in this manner. The other types of foods you are likely to find in airtight containers include smoked fish, meat, coffee, cocoa, nuts, cheese, butter and crisps. When a manufacturer wants to keep the food fresh for a short period of time the vacuum storage becomes useful. This type of food includes meat, vegetables, milk and some types of soups. One of the main reasons why liquids cannot remain in a vacuum environment for longer is because it encourages bacterial growth. Moisture is a good environment for bacteria growth. However, vacuum package reduces the chances of the food spoilage by approximately three to five times.
The concept of vacuum packing is very important in terms of food preservation. This type of packing has other uses as well, which you might find applicable at home. Sometimes you have to pay for every full bag of household waste gathered. With vacuum packing equipment you can reduce the weight of the garbage. Vacuum packing is specifically used to reduce the weight of other non-edible items such as mattresses and clothes. They are later emptied using a vacuum cleaner. The technique is also used to reduce the weight of inflatable things. There are many products used for packaging different types of items. Examples include the airtight bottles, mason cans, plastic bags and other items.
Most of them can be used conveniently and safely at home. Mainly the inert gases like nitrogen is applied in the process of vacuum packaging. All air is removed from the packing material and it is replaced with an inert gas. This gas facilitates conservation of packed food and avoids spoilage. The technique of sealing the packaging items is also very important. There are different types of sealers used for this purpose. An external sealer is a good example. It involves a bag, which is fixed to the vacuum sealer equipment outwardly.
The equipment then removes all the air and seals the bag. The other type is the chamber sealer, which typically uses a plastic bag. The entire sealing exercise happens inside the equipment. The product is placed inside it, the lid is shut down, and the air is removed. Once all the air is eliminated, the bag is sealed and the lid is opened to remove the product. These chambers are meant for industrial vacuum storage purposes. This method is very useful in relation to food packaging. It allows for preparation of special foods which are the preserved via vacuum packing.

How long can you keep meat in the freezer?
More specifically chicken breasts and hamburger patties.
They are all individually vacuum packed. It comes fresh from the local meat store with a 1 week expiration date (guaranteed fresh for 1 week), I open the package, vacuum pack individual patties / breasts for easy cooking in the future.
How long can I keep it in the freezer without it going bad? More than a week, I hope (since the package is now actually FROZEN, and is vacuum packed)?
Once frozen, it will keep indefinately, and will only lose food value as the meat gets older, bacteria need warm temp to grow (over 4 degrees cels.) and oxygen as well, by taking both of these things away you will prolong the life of the food. Vacuum packing the meat will also stop freezer burn. On another note, vacuum packing the meat should give you 14 days stored fresh in the fridge as long as the seal remains intact.
